Well, it’s Sunday night and after a whirlwind weekend I’m starting with something simple: Chex Muddy Buddies mix. I think we’re all familiar with Chex party mix but this particular treat is a sweet/crunchy recipe that calls for Rice Chex. I didn’t have Rice Chex on hand so I used Corn Chex and it came out just fine. I’m particularly pleased with Rice and Corn Chex being not only gluten free but available at Wal-Mart (cheap!) and crunchy enough to hold up under the wet ingredients in this recipe.
You’ll Need: Rice Chex (corn works just as well), peanut butter, chocolate chips, margarine, icing sugar and vanilla essence. The original recipe can be found here in the gluten-free recipe section of the Chex website. Since there’s only two of us and I wasn’t having a party I made 1/3 of the called for amounts.
Yum Factor: thumbs up!!
Poopy Factor: none, this was a winner all round.
