Questions to ask when determining what foods are safely prepared:

1. Is the meat dusted in flour?
2. Is the sauce thickened with a roux?
3. Does the salad dressing contain soy sauce?
4. Is the meat served on toast?
5. Are there croutons in the salad?
6. Cross contamination can occur in Gf foods fried in the same fryer as non-Gf selections. Ask if these foods are fried in a separate fryer.
7. Be aware that soups, stews, sauce and pot pies can contain gluten. If unsure about multiple ingredients, avoid these.
8. Avoid foods where ingredients are hidden (i.e: pastry-covered foods). Visual inspection is an important precaution.
9. Desserts can incorporate allergens like nuts in ways unexpected. If in doubt, order something you know is gluten free like fresh fruit.
10. Be aware that in buffets serving utensils can be used in GF and non-GF foods or drag crumbs from one to another and cross-contaminate.
