Sisters Three GF bread mix

I spent a weekend with my best friend recently whose 2 boys are autistic and she herself has multiple food allergies. The younger son is presently on a restricted diet with includes no gluten so she’s well versed in alternate diets. Before I came she excitedly told me she’d found a really good GF bread mix and her mother was whipping up a loaf in my honour. I can’t tell you how exciting this was. GF sandwich bread? A real peanut butter sandwich for little old me? YEEHAW!

Now seriously I’ve never been brave enough to try GF bread so I don’t have much to compare this to but Sisters Three Gluten Free white bread mix IS the schnizzle. Soft on the inside, crusty on the outside, sliceable and actually white coloured, I was in bread heaven. Seriously. The outside was crusty, which I didn’t actually love but gave some texture to my PB sammie and I have no complaints.

Lucky for me, when I returned home I found a bag of the mix tucked into my duffel and as I don;t have a full loaf pan, I thought I’d be swift and make ‘scones‘ by dropping the mix onto a greased baking sheet. While this turned out ‘okaaaaaaaaaay,’ I probably would have preferred anther PB sammie in the longrun. Like I said, they’re okay but I’d recommend baking it as a loaf in a pan. Then again, my best friend’s mother can turn out just about anything better than me so it may have just been that!  I’m also not sure where my friend got this mix but I’m guessing the Punxsutawney Wal-Mart which has a surprisingly large selection of GF items in its own aisle. On this subject I say to Pittsburgh AGAIN, get with it already and stock more. If you stock it, we will buy.

Taste Factor: Excellent! Good texture, good taste, keeps well.  The non-GF’ers loved it too.

Poopy Factor: I didn’t really like the crust on it and the mix uses Crisco which made my internal calorie counter have a stroke.

Labor Day barbeque? Only if you can puree it!

pbbj ingredientsIt’s Labor Day weekend and poor Husband has had his wisdom teeth removed just in time to not enjoy any picnic food.  This isn’t helping his weight any- I have the unenviable fortune of being a woman married to a man who can’t gain weight to save his life. Not being able to open his jaw for more than to pass a straw through has put the challenge to me to get hoardes of calories through his lips without clogging up the straw.

So I had to be somewhat creative with the blender.  Yeah, yeah, we do ensure and boost and all of those but sometimes you just need actual food. So I pulled out the tried and true rib stickers and made what I thought turned out to be a really nice little smoothie that makes your belly suck in when you think of just how many calories are in the cup. This is a gluten free recipe and you can always substitute low or fat free ingredients to bring down the calories. Or if you’ve had your teeth out too, suck it up as is.

Rose’s PBBJ Smoothie

1 banana

4 or 5 large strawberries (I used whole frozen from a mixed fruit bag)

4 oz. strawberry fibre yoghurt (I used Wal-Mart brand, comes in a 4 oz container and is nonfat)

3 tbs smooth peanut butter (I used Skippy Natural)

2 tbs sweetened condensed milk (I used fat free Wal-Mart brand)

1/4 c milk

splash of vanilla essence

banana and condensed milk

banana and sweetened condensed milkCut up the banana and stawberries into 1/2″ chunks. There’s no need to thaw your strawberries if you use frozen. Liquify the banana and 1 tbs sweetened condensed milk.

strawberries added inAdd chopped strawberries to the yellow mix and remaining tablespoon of condensed milk.

Add peanut butter and 1/2 of the milk and blend well.

Add yoghurt and a little more milk and blend. Add a splash of vanilla essence and pulse to blend.

My husband liked his smoothies thin so if you need to, add more milk and blend again to thin it out. This smoothie is a good gluten free way to get fruit, protein, calcium and calories and it’s not heavy on the taste. I say this because my British husband thinks peanut butter is a heresy and you really can’t taste it here under the fresh strawberry taste.

Success! Betty Crocker GF cake mix

My mother, who lives 2 hours north of New Orleans, pointed out to me one day that the local Wal-Mart had begun to carry gluten free cake mixes and pasta. The Wal-Mart near me has been a little slow on the draw but long before she mentioned it I exclaimed with a cry of joy that Giant Eagle in the Waterfront had a little row of Betty Crocker GF cake blends.

Betty Crocker gluten free mixesMy first impression was thank goodness a big name like Betty Crocker has figured out how to make their mixes gluten free. My next thought was, holy crap that’s a load of money for a cake mix. And so I resisted picking one up until my comrades at work got a free double chocolate cake from the department down the hall and after watching them have second helpings I walked to the local Shur-Save and picked up the yellow Betty Crocker cake mix for $4.95 and counted the hours til I could get home and experiment. Actually I don’t know why I didn’t pick up the chocolate mix, or both for that matter. I did get some Pillsbury 50% less sugar chocolate frosting though.

Of course by the end of the day I’d browsed through my Google Reader and found this adorable creation by Whisk Kid and thought well I’d just go right home and whip up a rainbow-albeit-chocolate-frosted-cake, because I’m nothing if not all about creative diversions. Dear Reader, I hope you’ve stuck with me long enough to know that nothing I ever plan out goes quite to the directions.

Surely enough, as I sat down to my computer this morning to pull up the link I’d starred in my goofy reader, Gmail threw up all over the internet and I lost my patience and trouped off to the kitchen (about 8 feet away from my chair at the moment) and figure it out myself.

I must say I’m impressed with the packaging for the Gf cakes. I know, what does that have to do with the taste? But my graphic designer background demands I comment on the follow-through of the famous Betty Crocker branding yet distinctiveness of this new line of cooking product. Okay, that said, I can say as far as ease this was a treat to make. While most cake mixes call for 3 main ingredients plus the dry mix (usually oil-water-eggs), the GF version was no more complicated with add-ins (marg-water-eggs-vanilla).

ingredients!Okay, I was a little skeptical at first because the mix seemed really thin to me and turned to glue as soon as I added the first liquid….yuck.

As I added more ingredients though, it turned into the tastiest, lightest pre-mixed batter I’ve ever worked with. TASTY. I could have cat there and ate the entire bowl right there.

I even tried to do the whole rainbow thing, which wasn’t as easy as I’d somehow envisioned it. I just basically divided the batter into 3 parts and coloured 2 of these before I ate any more freaking batter so it would at least make it into the oven.

I decided I was too busy to make the actual cake so I pulled out the leftover Barney cupcake papers to use those up (don’t ask) and decided the whole colour layering thing was probably best left to Whisk Kid. Instead, I thought perhaps I could marble the batter and still come out looking like I knew a thing or two about baking because after all, Betty Crocker can make anyone look like they can bake, right?

coloured battersready to bake Let’s just say my marbling didn’t go like I’d envisioned it either. Note to anyone trying this mix- the package says it makes 12 cupcakes. I felt a little burned on that. Not that I needed to find room in my kitchen for any more cupcakes than humanly necessary for 2 people to scarf down but seriously, $4.95 for a box and then it makes half the cupcakes a normal mix would? Betty Crocker, you have betrayed me.  I spooned it out to fill the tray up halfway, thinking I would swirl in my coloured batter and then topped them up on second thought. As you can see, I ended up just piling on the second batter and then ran out. I was thinking maybe I could stretch it to 2 batches but as most gluten free recipes for baked goods come out much denser, I filled them as close to the brim as possible to make them bigger.

my pretty cakes!wowAnd then Betty redeemed herself when I pulled open the door to the oven and was completely surprised at the tops of my little cakes. Look how high they rose! I was absolutely chuffed at these. They even look a teeny bit marbled :) How awesome is Betty?!

finished cake Taste Factor: Nom, nom, nom- huh? Fabulous. Light, airy, sweet and freaking delicious. What else is cool? They’re comparable to other yellow cake mixes from Betty Crocker in calories.

Yummy quick broccoli fry

We’re not big meat eaters (neither are we vegetarians) and I spied this quick little recipe on the BBC GoodFood site the other day and decided to try. BBCGoodFood is one of my favourite food magazines. I can skim out the GF recipes for me and practise making the heavy traditional stuff like pork pies and pasties for my husband.

The original recipe for Beef StirFry w/Broccoli and Oyster Sauce is right on the GoodFood site. I, of course, made modifications. If you’re looking to try other recipes on this site or from the magazine (I either get a copy from the library or buy the holiday edition from Barnes and Noble), you’ll need to convert some of the measurements.

These were my ingredients- nothing really fancy or complicated. I didn’t have a garlic clove laying around so I used powdered and I ommitted the beef. I also substituted fish sauce for the oyster sauce as Wal-Mart didn’t have any gluten free stuff.  Oh heck, let’s face it, I just rearranged this entire recipe!

Since this is fairly easy and tasty fare, I added some sliced mini pepper (so cute! got them at Costco) and green onions instead of a white onion. I just followed the first couple of steps and softened the peppers first before adding the brocolli. Mine was frozen so I adjusted the cooking time a little and added the green onions last.

brown ricealltogether now!There were several suggestions in the comments on this recipe for small substitutions, serving on rice noodles, etc. I served mine over plain brown rice and it was DE-LISH.

Tasty factor: thumbs up from me- will try it next time with the meat.

Poopy factor: none (however, husband didn’t try it because it has something ‘evil and green’ in it.)

Cool special edition M&M’s

M&Ms are gluten free (except the crispy variety, which I haven’t seen in the northeast for some time now) and I noticed since Shrek came out they’ve really gotten on the bandwagon for special edition candies. The first ones I wasn’t so thrilled about frankly. Big fat ugly ‘ogre-sized’ chocolate candies were cute for about a minute but then I’m afraid M&M’s got on the bigger is better kick and Americans certainly don’t need to be scarfing down mammoth snacks. Why am I even complaining about this? For one, because their have been so many movie special edition candies that frankly they’re not special anymore. Remember those pastel Easter M&Ms and red/green Hershey Kisses? Those were cool until they started manufacturing 20 million other varieties that were pretty metiocre. Don’t screw up a good original.

And secondly, the candies are getting bigger and bigger. Good for you M&Ms, you’ve put the calories right there on the front of the package to save us all from even expending the energy to turn it over and look but there are less candies in the bag overall to stay within calorie limit. Dunno about you, but I think most people are used to a good handful and will just grab a second bag. (Smacks forehead with hand- Oh, I just caught on to marketing!)

So that brings me to the last couple of new editions I stumbled across in Wal-Mart: the short lived raspberry M&Ms (not the big egg-shaped ones in the special carton but actual raspberry-flavoured ones in a pink bag), Coconut and now Strawberry peanut butter (sold on its own or in a king-sized grey Transformers packet).  I could be mistaken but I thought a few years ago M&M’s tried the whole peanut butter/jelly thing but maybe that was another company.

Coconut special edition M&MsI’m a sucker for coconut, which I notice is not a popular flavour in the American diet and yet every candy company gets on this little bandwagon every couple of years and makes a coconut edition of something that fades just as fast as it hits the shelves, ending up at the end of shelf aisles everywhere with red clearance tags. So of course, I didn’t just buy one and in a couple of weeks I’ll go grab a ton of them before they disappear.  My gripe with the coconut M&M’s is 1: they’re huge and 2. they’re not really all that coconutty. Putting some actual coconut shreds in there may have made a difference but you can just taste the flavouring in the aftertaste of the chocolate. Still, it’s coconut and GF so I’m gonna have to eat them.

Special edition strawberry peanut butter M&MsHusband pointed out the Strawberry Peanut Butter bag on the shelf in Wal-Mart and we did find a packet in the checkout rather than trying the entire lb. bag. For one, he hates peanut butter but thought mistakenly that there were both separate strawberry and peanut butter candies you could just eat together for the combination. Wrong, but I think that may have been a better idea. As with the previous, these are monstrous and even higher in calories (230 cal per regular packet as opposed to 210 for coconut) and the taste is: eh. The strawberry flavouring is in the aftertaste and even the peanut butter’s not that strong. Basically they smell a lot better than they go down and our car is now M&M-y.

Tasty Factor: so/so. Think I’ll stick to plain chocky
Poopy Factor: so/so. Novelty is always good when used sparingly but sparingly is the word.
